A Butcher is in charge of ensuring that all meats and fish are cooked to the highest standards in order to provide a good Guest and Member experience while also training workers and controlling costs.
What am I going to do?
As a Butcher, you are in charge of ensuring that all meats and fish are cooked to the highest standards in order to provide an outstanding Guest and Member experience. A Butcher will also be required to teach employees and keep costs under control. You will be specifically responsible for accomplishing the following tasks to the highest standards:
Prepare all meats and seafood to the highest standards and in accordance with corporate rules.
Ensure proper food storage and stock rotation.
Any food spoilage or waste should be reported to the Head Chef.
Maintain a clean and tidy working environment and avoid cross contamination.
Assist in the successful resolution of visitor inquiries in a timely and efficient manner.
Establish and monitor portion sizes for meat and fish cuts.
Responsible for cost containment without sacrificing standards, increasing gross profit margins, and meeting other departmental and financial goals.
Assist other departments while maintaining positive working ties.
Responsible for adhering to and training on Health and Safety and Food Safety legislation and standards.
Observe hotel security and fire standards.
Issues with maintenance, hygiene, and hazards should be reported.
Be environmentally conscious.

Certificate in Intermediate Food Hygiene

Previous experience in the kitchen or butchery
It would be excellent for you to display the following abilities and distinctions in this position:
Previous cooking experience in a similar job is required.
